Apple Waffles

We made this recipe up the other day, and it was awesome. It's fattening, so eat with caution.

Waffle Batter:
1 C. Milk
1 Egg
1 C. Flour
1T. Sugar
1 T. Baking Powder
1 T. Vanilla
1/4 C. Melted Margarine or Butter

Mix milk, egg, flour, sugar and baking powder. Add in melted margarine, and then vanilla. Cook as you normally would.

Apple Topping:
6 T. Margarine or Butter
3 Apples, Peeled, Cored and Diced
1/2 C. Brown Sugar
1 T. Cinnamon
1/2 C. Walnuts

Melt 4 tablespoons of the margarine or butterin a skillet over medium high heat. Add 3 diced apples, brown sugar , cinnamon and walnuts. Cook, stirring constantly, for 5-7 minutes. Remove from heat and add remaining 2 tablespoons of margarine. Stir to melt. This last step keeps the sugar from crystallizing too much. Otherwise it will be a globby mess.

Serve over warm waffles. Optional: Top with whipped topping.
