Broccoli Cottage Bake

Broccoli Cottage Bake
(The ham and hash brown variation at the bottom makes a great breakfast casserole)

1 container (16 oz.) Cottage Cheese
1 pkg. (10 oz.) frozen chopped broccoli, thawed, well drained
3/4 cup Shredded Sharp Cheddar Cheese
1 jar (7 oz.) roasted red peppers, well drained, chopped
4 eggs, beaten
3 Tbsp. each Parmesan Grated Cheese and plain dry bread crumbs
HEAT oven to 350°F.
MIX all ingredients until well blended.
POUR into 9-inch pie plate sprayed with cooking spray.
BAKE 45 min. or until center is set. Let stand 10 min. before cutting into slices to serve.
Substitute 1/2 cup chopped red bell pepper for the roasted red peppers.
Substitute hash browns for the broccoli and add cubed, cooked ham for a breakfast casserole
