Strawberry Lemonade Cupcakes
2 1/2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter or margarine
1 3/4 cups sugar
1 1/2 teaspoons vanilla
1 cup milk
1/4 cup lemon juice
2 teaspoons lemon peel or lemon extract
1 recipe buttercream frosting
4-6 medium strawberries, hulled
1. Line 2 muffin pans with paper baking cups. Combine flour, baking powder and salt; set aside.
2. In a large mixing bowl, beat butter for 30 seconds. Add sugar and vanilla. Beat till well combined. Add eggs, one at a time, beating one minute after each. In a small bowl, combine milk, lemon juice and extract or peel. Add dry mixture and milk mixture alternately to beaten mixture till well combined. Pour batter into paper lined muffin pans. (I use an ice cream scoop to get cupcakes that are the same size.)
3. Bake cupcakes in a 375 degree oven for 18-20 minutes. Cool completely.
4. Mix up a batch of buttercream frosting. (I am in love with the recipe from Our Best Bites!! --I have to double the recipe for 24 cupcakes.) Puree strawberries in a food processor and whisk into frosting until well mixed. Frost cupcakes and enjoy!!
