The Freezer Is Your Friend! :)

Sandra is getting ready to have a baby. It's nice to have meals in the freezer so that you can give yourself a break from cooking for a few weeks. We live out in the sticks, so I have these meals in my deep freezer for the nights I just don't feel like cooking. Whenever I prepare these next few recipes, I almost always double the recipe and freeze half. That way I still have dinner ready for that night, but I'll have one in the freezer when I need it. Other recipes (that are already on the blog) that work great for freezer meals are:

Chili
Chicken Tortilla Soup
Chicken Enchiladas
Pizza Soup
Cream of Potato Soup
Pizza Meatloaf
Cream Cheese Chicken
Super Sausage Gravy

Lara's zucchini bread would freeze well, too. When we are up to our eyeballs in zucchini in the Summer, I make huge batches of zucchini bread to keep in the freezer. I thaw them overnight, then we have them with eggs for breakfast on busy school mornings.

Whenever I make cookies, I usually only bake half of the dough. The other half I will scoop onto a cookie sheet and freeze them individually. When they are frozen, I store them in a Ziploc bag in the freezer. I'll bake up a few for an after school snack, then I'm not tempted with the leftovers! :)

(I also freeze extra rolls to have with our freezer soups...)

    I cannot WAIT to get a deep freezer someday for this very reason! We freeze Stuffed Shells and meat balls quite often (freeze the meat balls individually the same way you do cookies and then throw them in a Ziplock). Also, sometimes if I'm browning hamburger or chicken, I'll do double and freeze half for those times when I'd really like a certain meal, but don't feel like cooking the meat. Then I can just thaw it and throw it in the soup/casserole/whatever. :)

  2. Thanks Nat :) I've never frozen the bread but just freeze the shredded zucchini. As for the cookies, I bake them and freeze them too. I should freeze the dough then they probably wouldn't go so fast. I've got about six meals frozen so far, I really would like to have a months worth but I doubt I get there. Plus I don't know if I have room. Thanks for the recipes, I'll search for them.
