Romano Ranch Chicken

Romano Ranch Chicken

2 chicken breasts
1 pkg. dry ranch
1/4 c. olive oil
1 lg onion (chopped)
1 green bell pepper (chopped)
6 cloves garlic
6 cups spinach (chopped)
2 c. brown rice
1 tsp. salt
1/4 tsp pepper
1/4 tsp garlic salt
1/2 c. Romano cheese (I usually can only find it by the deli with the other speciality cheeses)

-Preheat oven to 350. Place chicken in a baking dish and sprinkle 1/2 of ranch packet on top. Bake 30-35 minutes (or until chicken is done).
-This is where I usually cook my rice.
-Heat oil in large pan. Saute onion, pepper, garlic and spinach for 5-7 minutes.
-Stir in cooked rice and seasonings.
-Cube chicken and add to mixture. Add remaining ranch, and then the cheese. Reduce to low and simmer for 5 minutes. Serve and enjoy!!
