Hummus

Hummus is a staple in our home. Everyone loves it, including our 1 year old. I've tried lots of different recipes and variations and have finally come up with what we love.

What you will need:
1 15 oz can of Garbanzo Beans (or Chickpeas), drained and rinsed (or 1 1/2 cup cooked)
1/4 cup tahini
2 Tbsp olive oil
1 Tbsp lemon juice
1 garlic clove
1 tsp. salt
1/4 cup vegetable stock

Add beans, tahini, oil, lemon juice, garlic and salt into a blender or food processor. Blend until it stops blending (should only take a few seconds). Scrape mixture with a rubber spatula. Slowly begin adding stock and blend until smooth. Add less stock for chunkier hummus, more for smoother hummus.

We love to dip crackers and vegetables in it. We use it as sandwich spread in place of Mayo.

I'm pretty busy at the moment, but I'll try to get a few recipes up before we move. After we're settled I will be more active here.
