Classic Waffles

We can never go back to Mix Waffles after these babies. :)

1 1/2 Cups Flour
1/2 Cup Corn Starch
1 Tbsp Baking Powder
2 Tbsp Corn Meal
3/4 tsp Salt
1/2 Cup butter, melted
3 eggs, separated
1 3/4 Cups Milk
1 tsp vanilla
2 Tbsp Sugar

In a Large Mixing bowl sift together flour, corn starch, baking powder, corn meal, and salt. In a small bowl mix milk, egg yolks, and vanilla. In another bowl, beat egg whites till soft peaks form. Add sugar and continue beating till stiff peaks form. Add milk mixture to flour mixture. Stir in melted butter. Fold in egg whites. Do not over mix!

Cook in your favorite waffle iron. When we're feeling rich we eat these with whipped cream and fresh fruit. Syrup or jam are delicious, too!

  1. Mmmm! We tried these out for breakfast. They were tasty, and we didn't have any leftover!

    ...but I had to guess on the cornstarch. 1/2 what?

    and...

    I wasn't sure if I should label it a breakfast or a bread because I have cook books that do both. Was it ok to do both or should we just pick one?
