My kids gobbled this up tonight. My two year old had thirds.
Sorry I didn't get a picture of it in a nice bowl or table setting. You get the idea of how much they liked it from this one though he he.
Ingredients:
4 slices bacon, diced
1 med. onion minced
6 med. potatoes, peeled and cubed
2 cups chicken broth
2 15 oz cans creamed corn
1 cup heavy cream or milk
1/2 tsp salt
1/2 tsp pepper
Directions:
In a 2 qt. saucepan over med. heat saute diced bacon and onion. Poor off drippings, then add potatoes and cook 10 min. Add broth and corn; cook, stirring occasionally for 40 min. or until potatoes are tender. Blend in cream or milk. Add salt and pepper and cook till heated through. This one pot meal is also good while camping. Enjoy :)
