We've been experimenting with the Black Bottom Cupcakes. My husband thought they'd be yummy with peanut butter chips, and I thought it would be better with my favorite chocolate cupcake batter, so we tried it. Little Chef named them "Reese's Chocolate Bottom Cupcakes"; which is really funny if you've got a baby named Reese and he often has a chocolate bottom! :)
Reese's Chocolate Bottom Cupcakes
Ingredients:
2 cups sugar
1 cup milk
1 cup canola oil
1 cup water
2 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1/3 cup cocoa
2 teaspoons baking soda
1 teaspoon salt
Filling:
8 oz. pkg. cream cheese
1 egg
1/3 cup sugar
1/8 teaspoon salt
4 oz. semi-sweet chocolate chips
2 oz. Reese's Peanut Butter chips
Directions:
1. Preheat oven to 375.
2. Combine cream cheese, egg, sugar, salt and mix until well blended. Mix in chocolate chips and set aside.
3. In a mixing bowl combine flour, sugar, cocoa, soda and salt. Add eggs, milk, oil, water and vanilla in another bowl. Combine wet ingredients and dry ingredients. Beat until smooth.
4. Fill paper cupcake liners 1/4 full with cake batter.
5. Top with heaping tablespoon of cream cheese mixture. Add another heaping tablespoon of cake batter to the top of the cream cheese mixture. Sprinkle with additional granulated sugar.
6. Bake for 15-20 minutes.
Makes 24 cupcakes.
The next time I make these, I am going to skip the sugar sprinkling and frost them with Chocolate Ganache Frosting. I think they will be absolutely delish!
