1 cup onions, finely chopped
1 cup diced celery
2 cup diced potatoes
2 cans of clams
1 1/2 tsp salt
optional: add chicken boullion with water
Cover onions, celery and potatoes with water - just enough to cover veggies. Add clam juice and cook over medium heat, covered until tender (about 10-15 minutes).
While cooking take:
3/4 cup butter
3/4 cup flour
and cook stirring constantly. Add 1 quart half 'n half. Stir with whisk until smooth and cook until it's really thick. Add all veggies to milk mixture. Add clams, 2 tablespoons red wine vinegar and pepper to taste.
